Fresca Grilled Chicken Sandwich with Pineapple Corn Salsa
Ingredients
Fresca Grilled Chicken Sandwich
- 4 CHEF'S CRAFT® Sous Vide Chicken Breast Fillets
- 4 brioche rolls
- Pico de Gallo (recipe below)
- Adobo Sauce (recipe below)
- Pineapple Corn Salsa (recipe below)
Pico de Gallo
- ½ sweet onion, finely diced
- 1 jalapeño pepper, ribs and seeds removed, finely chopped
- 2 limes, squeezed
- 4 Roma tomatoes, diced
- ¼ cup fresh cilantro leaves, chopped finely
- ½ teaspoon salt
Adobo Sauce
- ½ cup mayonnaise
- 1 tablespoon of adobo chili paste
- 1 lime, squeezed
Pineapple Corn Salsa
- 2 tablespoons extra virgin olive oil
- 2 cups frozen whole kernel corn, thawed
- 1 poblano pepper, seeded and diced
- ¼ cup red onion, peeled and diced
- 2 garlic cloves, chopped
- 1 cup fresh pineapple, diced
- 2 Roma tomatoes, diced
- 2 limes, squeezed
- ½ bunch fresh cilantro leaves, chopped finely
- ½ teaspoon cumin
- Salt and pepper to taste
Directions:
Pico de Gallo
- Combine all ingredients together.
- Set aside and chill.
Adobo Sauce
- Whisk together all ingredients.
- Set aside and chill.
Pineapple Corn Salsa
- In a medium size skillet, add the olive oil and bring to medium high heat.
- Add the corn, Poblano pepper, onion and garlic then sauté for five minutes.
- Add all remaining ingredients and turn the heat down low. Simmer for two minutes stirring often.
- Taste and adjust the salt and pepper to your taste.
- Set aside and chill.
Fresca Grilled Chicken Sandwich
- Heat the chicken breast fillets according to the package.
- Slice the Brioche rolls in half.
- Place a portion of Pico de Gallo on the bottom of the bun and place the chicken breast on top.
- Spread some Adobo sauce on the inside of the other bun and place on top of the sandwich.
- Serve the sandwich with tortilla chips and pineapple corn salsa and enjoy!
