Decadence, warmth, made with love. These chicken and waffles check off all the comfort food boxes and are paired with a warm bourbon pecan syrup that is sure to please this fall.

This recipe can be made on a relaxing Saturday morning for the perfect brunch, or use Chef Frank’s shortcuts to make this a snappy weeknight meal - you can even turn this recipe into a decadent game day snack by simply cutting your chicken into bite sized pieces before frying and placing on miniature waffles.

ingredients

Chicken

  • 1 lb Small Chicken Breast or Tenders
  • 1 tbsp Freshly Chopped Chives
  • 1 ½ cup Flour
  • ½ tsp Salt
  • 1 tsp Cracked Black Pepper
  • 1 ½ tsp Garlic Powder
  • 1 tsp Cayenne Pepper
  • 1 ½ tbsp Paprika
  • 1 tsp Onion Powder

WAFFLES

  • 2 Eggs
  • 2 cups All Purpose Flour
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • ½ tsp Ground Cinnamon
  • ½ tsp Nutmeg (optional)
  • ½ tsp Salt
  • ¼ cup White Sugar
  • 1 tsp Vanilla Extract
  • ¼ cup Vegetable or Canola Oil
  • 1 ¼ cup Milk
  • ¼ cup Butter, melted

BOURBON PECAN maple SYRUP

  • ½ tsp Cinnamon
  • 1 tbsp Butter
  • ¾ cup Maple Syrup
  • ½ cup Chopped Pecans
  • ¼ cup Jack Daniels Honey Bourbon

DIRECTIONS

  1. In a large zip lock bag (or bowl if you feel like doing dishes) mix the salt, cracked black pepper, garlic powder, cayenne pepper, and onion powder. Add chicken and shake the bag to coat. Next, add the all-purpose flour and paprika and shake well until the chicken is fully coated.
  2. Pour 1/3 container of Vegetable Oil in a Deep Fryer or Large Pot. Heat the oil to 375 degrees, or until a drop of water added to the pot sizzles.
  3. Fry in oil for 6-8 minutes until golden brown, or until a meat thermometer reaches 165 degrees in the center.
  4. In a large bowl, combine all-purpose flour, baking powder, baking soda, salt, ground cinnamon, and nutmeg (if using). In a medium bowl, whisk together eggs, sugar, almond milk, vanilla, oil and butter. Add to dry ingredients.
  5. Turn on waffle iron and spray with oil of choice. Cook according to iron directions.

    Chef Frank’s Tip:
    Dust plated chicken and waffles with powdered sugar for an extra sweet touch!

BOURBON PECAN maple SYRUP

  1. Add the Jack Daniels Honey Bourbon to a small saucepan.
  2. Cook for 2-3 minutes to cook off the strong alcohol flavor.
  3. Add the Maple Syrup, Butter, Cinnamon, and Chopped Pecans and stir.
  4. Let simmer on low heat until ready to serve.
